Chaos is an effect possessed by specific weapons, that can be attained by either upgrading a weapon down the Chaos ... SO chaos blade gets stronger up to 10 humanity. Also it upgrades with twinkling titanite so you can get it to 4 or 5 pretty quick. 10 humanity minimum is needed for full damage as said above. However, like all boss weapons, it upgrades with Demon titanite, you get from killing Titanite demons, not twinkling titanite.

The uchi has more versatility that way. Also, if you're getting bored of the uchi, the chaos blade isn't much different for its moveset. So if that's the problem then you might just want to find a different dex weapon.
